Ingredients
- 1.50 oz white rum
- 1 oz coconut cream
- 0.50 oz simple syrup
- 1 ripe peach, pitted and cubed
- 2 dashes Angostura bitters
- 0.25 oz dark rum (optional)
- Ground cinnamon, for garnish
- 1 cinnamon stick, for garnish
- Ice
Instructions
- Combine white rum, coconut cream, simple syrup, peaches, and Angostura bitters in a zipper-lock bag or resealable container.
- Refrigerate for at least 8 hours or up to overnight.
- Transfer the rum mixture to a blender and add a handful of ice.
- Blend at high speed until well mixed and thick, about 45 seconds.
- Pour into a highball glass.
- Top with dark rum (if desired).
- Sprinkle a dash of cinnamon on top and garnish with a cinnamon stick.
