Ingredients

  • 1.50 oz white rum
  • 1 oz coconut cream
  • 0.50 oz simple syrup
  • 1 ripe peach, pitted and cubed
  • 2 dashes Angostura bitters
  • 0.25 oz dark rum (optional)
  • Ground cinnamon, for garnish
  • 1 cinnamon stick, for garnish
  • Ice

Instructions

  1. Combine white rum, coconut cream, simple syrup, peaches, and Angostura bitters in a zipper-lock bag or resealable container.
  2. Refrigerate for at least 8 hours or up to overnight.
  3. Transfer the rum mixture to a blender and add a handful of ice.
  4. Blend at high speed until well mixed and thick, about 45 seconds.
  5. Pour into a highball glass.
  6. Top with dark rum (if desired).
  7. Sprinkle a dash of cinnamon on top and garnish with a cinnamon stick.
