Ingredients

  • 1 lime, cut into wedges
  • 2 tablespoons salt flakes
  • 3 passionfruits, halved
  • Extra pulp from 1 passionfruit
  • 3 tablespoons peeled, chopped pineapple
  • 2 oz tequila
  • 1 cup ice cubes
  • Skin from 1/2 pineapple, washed
  • 1/4 cup sugar

Instructions

  1. To make pineapple syrup, soak pineapple skin in 4 cups of water overnight. Then strain the liquid and whisk in sugar. Chill until needed.
  2. Rub glass rims with lime wedges and dip in salt. Set aside.
  3. Pass passionfruit pulp through a sieve into a jug, discarding seeds.
  4. Blend passionfruit juice, chopped pineapple, tequila, 1/4 cup pineapple syrup, and ice until smooth.
  5. Pour the mixture into prepared glasses and stir through extra passionfruit pulp to serve.
