Passion-Pine Slusharita
A tropical and refreshing frozen margarita with the flavors of passionfruit and pineapple, topped with a hint of tequila and pineapple syrup.
Ingredients
- 1 lime, cut into wedges
- 2 tablespoons salt flakes
- 3 passionfruits, halved
- Extra pulp from 1 passionfruit
- 3 tablespoons peeled, chopped pineapple
- 2 oz tequila
- 1 cup ice cubes
- Skin from 1/2 pineapple, washed
- 1/4 cup sugar
Instructions
- To make pineapple syrup, soak pineapple skin in 4 cups of water overnight. Then strain the liquid and whisk in sugar. Chill until needed.
- Rub glass rims with lime wedges and dip in salt. Set aside.
- Pass passionfruit pulp through a sieve into a jug, discarding seeds.
- Blend passionfruit juice, chopped pineapple, tequila, 1/4 cup pineapple syrup, and ice until smooth.
- Pour the mixture into prepared glasses and stir through extra passionfruit pulp to serve.
