Ingredients

  • 1 egg yolk
  • 1 tablespoon sugar
  • 1/3 cup whole milk
  • 2 tablespoons heavy cream
  • 1/4 teaspoon fresh nutmeg
  • 1 egg white
  • 1/2 oz bourbon (optional)

Instructions

  1. Separate the egg yolk and white.
  2. Whisk the egg yolk with sugar until light in color.
  3. In a saucepan, heat the milk, cream, and nutmeg until just below boiling.
  4. Slowly drizzle a cup of the hot milk mixture into the egg yolk, whisking continuously.
  5. Pour the egg yolk mixture back into the saucepan and heat to 160 degrees.
  6. Add bourbon if desired, then refrigerate the mixture until chilled.
  7. Whisk the egg white until stiff peaks form, then fold it into the chilled yolk mixture.
