Minty Pimm's Citrus Cooler

Ingredients

  • 1 tea bag
  • 1/2 oz fresh mint leaves
  • 1 tbsp granulated sugar
  • 1.50 oz fresh orange juice
  • 1.50 oz fresh lemon juice
  • 2 oz Pimm's No 1
  • 2 sliced strawberries
  • plenty of ice

Instructions

  1. Place the tea bag and half of the mint leaves in a large jug, then pour over 5 cups of boiling water.
  2. Let it infuse for 10 minutes, then remove the tea bag and stir in the sugar.
  3. Once cooled, remove the mint leaves, add the orange juice, lemon juice, and Pimm's, and chill thoroughly. Can be made up to a day ahead.
  4. Serve over plenty of ice, with slices of orange, lemon, and strawberries, and remaining mint sprigs.
