Ingredients

  • 8 Earl Grey tea bags
  • 1/4 cup plus 2 1/2 tablespoons granulated sugar
  • 1 cup ruby port
  • 4 fl oz aged dark rum
  • 2 fl oz Allspice Dram
  • 2 fl oz freshly squeezed lemon juice
  • 1 cup whole milk

Instructions

  1. Heat 2 1/4 cups of water to 208°F, then pour it over the tea bags in a quart vessel and steep for 3 minutes.
  2. Add sugar to the tea, then stir in the port, rum, Allspice Dram, and lemon juice. Let the mixture cool to room temperature.
  3. Pour the milk into a glass pitcher, followed by the tea mixture, and let it sit for 1 hour without stirring.
  4. Line a large, fine-mesh sieve with a coffee filter and strain the mixture into a wide, 4-quart container, letting it filter for about 1 hour.
  5. Once filtered, transfer the liquid to a jar or pitcher and chill before serving.
  6. Store the clarified milk punch tightly sealed in the refrigerator for up to 2 months.
