Ingredients

  • 1 bar spoon of black cocoa powder
  • 3/4 ounce of dark rum
  • 1 1/4 ounce of simple syrup
  • 1 ounce of white rum
  • 1/2 ounce of coconut rum
  • 1 ounce of heavy cream

Instructions

  1. Combine the black cocoa powder and dark rum, and let it sit in an airtight container for at least an hour, or ideally a couple of days.
  2. Strain the black cocoa rum infusion by passing the mixture through a fine mesh strainer and/or cheesecloth.
  3. In a cocktail shaker, combine the simple syrup, white rum, coconut rum, and heavy cream.
  4. Add ice to the shaker and shake well for about 15-20 times.
  5. Strain the mixture over fresh ice into a serving glass.
  6. Carefully pour the black cocoa rum infusion over the drink using the back of a bar spoon to create a floating layer on top.
