Ingredients
- 1/2 cup sugar
- 1 cup water
- 1 small handful of rosemary sprigs
- 1/2 tbsp rosemary
- 1/2 tbsp coarse salt
- 2 tbsp sugar
- 1/2 tbsp lemon zest
- 1 oz fresh Meyer lemon juice
- 2 oz tequila
- 2 oz water
- 1/2 oz rosemary simple syrup
Instructions
- To prepare the rosemary-infused simple syrup, combine sugar, water, and rosemary sprigs in a medium pot. Simmer until the liquid reduces by half, creating a thick and sweet syrup.
- For the rim garnish, blend coarse salt, sugar, and lemon zest in a food processor until well combined. If the mixture feels moist, spread it out on a dish to dry or use a dehydrator.
- To assemble the cocktail, run a lemon wedge around the rim of your glass and dip it in the prepared rim garnish. In a martini shaker, combine fresh lemon juice, tequila, water, and rosemary simple syrup. Shake well and pour the mixture into the prepared glasses.
