Ingredients

  • 1/2 cup sugar
  • 1 cup water
  • 1 small handful of rosemary sprigs
  • 1/2 tbsp rosemary
  • 1/2 tbsp coarse salt
  • 2 tbsp sugar
  • 1/2 tbsp lemon zest
  • 1 oz fresh Meyer lemon juice
  • 2 oz tequila
  • 2 oz water
  • 1/2 oz rosemary simple syrup

Instructions

  1. To prepare the rosemary-infused simple syrup, combine sugar, water, and rosemary sprigs in a medium pot. Simmer until the liquid reduces by half, creating a thick and sweet syrup.
  2. For the rim garnish, blend coarse salt, sugar, and lemon zest in a food processor until well combined. If the mixture feels moist, spread it out on a dish to dry or use a dehydrator.
  3. To assemble the cocktail, run a lemon wedge around the rim of your glass and dip it in the prepared rim garnish. In a martini shaker, combine fresh lemon juice, tequila, water, and rosemary simple syrup. Shake well and pour the mixture into the prepared glasses.
