Ingredients

  • 2 cups whole milk
  • 3 tablespoons sugar
  • 1/2 vanilla pod or 2 teaspoons vanilla extract
  • 1/2 medium cinnamon stick
  • 3 cloves
  • Pinch of freshly grated nutmeg
  • 3 egg yolks
  • 1/2 cup brandy

Instructions

  1. Combine milk, sugar, vanilla, cinnamon, cloves, and nutmeg in a saucepan. Heat on medium until near boiling, then simmer for 20 minutes.
  2. In a bowl, beat the egg yolks until pale.
  3. Slowly pour the milk mixture into the egg yolks, whisking continuously.
  4. Return the mix to the saucepan and simmer on medium heat, stirring constantly, until thickened.
  5. Remove from heat, cool for 5 minutes, then stir in the brandy.
  6. Transfer to sterilized bottles and cool completely in the fridge for at least a week before serving.
