Ingredients
- 2 cups whole milk
- 3 tablespoons sugar
- 1/2 vanilla pod or 2 teaspoons vanilla extract
- 1/2 medium cinnamon stick
- 3 cloves
- Pinch of freshly grated nutmeg
- 3 egg yolks
- 1/2 cup brandy
Instructions
- Combine milk, sugar, vanilla, cinnamon, cloves, and nutmeg in a saucepan. Heat on medium until near boiling, then simmer for 20 minutes.
- In a bowl, beat the egg yolks until pale.
- Slowly pour the milk mixture into the egg yolks, whisking continuously.
- Return the mix to the saucepan and simmer on medium heat, stirring constantly, until thickened.
- Remove from heat, cool for 5 minutes, then stir in the brandy.
- Transfer to sterilized bottles and cool completely in the fridge for at least a week before serving.
