  • 1 1/2 tablespoons stevia/erythritol granulated sweetener
  • 1/4 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon instant coffee granules
  • 1 egg yolk
  • 1/2 cup plus 2 tablespoons heavy cream, divided
  • 1/4 teaspoon pure vanilla extract
  • 1 1/2 tablespoons good quality Irish whiskey


  1. In a medium saucepan, whisk together the stevia/erythritol granulated sweetener and cocoa powder until completely combined.
  2. Whisk in the instant coffee granules.
  3. Add the egg yolk and whisk to make a paste.
  4. Gradually whisk in 1/4 cup of the heavy cream, adding about a tablespoon at a time.
  5. Heat the mixture over low to medium-low heat, whisking frequently until it thickens slightly, reaching around 200°F. Avoid boiling and then remove from heat to cool.
  6. Whisk in the remaining 1/2 cup plus 2 tablespoons of heavy cream, vanilla extract, and Irish whiskey.
  7. Store the delight refrigerated in a tightly sealed glass jar.
