A low-carb version of the classic Irish Cream Liqueur, perfect for those on low-carb or ketogenic diets.
Ingredients
- 1 1/2 tablespoons stevia/erythritol granulated sweetener
- 1/4 teaspoon unsweetened cocoa powder
- 1/2 teaspoon instant coffee granules
- 1 egg yolk
- 1/2 cup heavy cream (divided)
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons good quality Irish whiskey
Instructions
- In a medium saucepan, whisk together the stevia/erythritol granulated sweetener and cocoa powder until fully combined.
- Whisk in instant coffee granules.
- Add the egg yolk and gradually whisk in 1/4 cup of the heavy cream, ensuring no lumps remain.
- Heat the mixture over low to medium-low heat, whisking frequently until it thickens slightly (around 200°F). Do not let it boil. Remove from heat and let it cool.
- Whisk in the remaining 1/4 cup of heavy cream, vanilla extract, and Irish whiskey.
- Store the liqueur in a tightly sealed glass jar in the refrigerator.
