Low-Carb Irish Cream Delight
A guilt-free, low-carb version of the classic Irish cream liqueur, perfect for those on low-carb, ketogenic, or diabetic diets.
Ingredients
- 1 1/2 tablespoon stevia/erythritol granulated sweetener
- 1/4 teaspoon unsweetened cocoa powder
- 1/2 teaspoon instant coffee granules
- 1 egg yolk
- 1/2 cup heavy cream
- 1/4 teaspoon pure vanilla extract
- 1 1/2 tablespoon good quality Irish whiskey
Instructions
- In a medium saucepan, whisk together the stevia/erythritol sweetener and cocoa powder until well combined.
- Whisk in the instant coffee granules.
- Add the egg yolk to the mixture to make a paste. Gradually add 1/4 cup of the heavy cream, whisking constantly.
- Heat the mixture over low to medium-low heat, whisking frequently until it thickens slightly (about 200°F), but do not let it boil. Remove from heat and let it cool.
- Whisk in the remaining 1/4 cup of heavy cream, vanilla extract, and whiskey.
- Store the liqueur in a tightly sealed glass jar in the refrigerator.
