Lime Zest Slush

But this time, it's made with real lime juice and a homemade lime syrup, offering a much healthier alternative. The addition of just a touch of dairy creates a creamy texture reminiscent of vanilla soft serve mixed with the cool and tangy iced slush. For a tropical twist, coconut milk creamer can be used in place of dairy.

Ingredients

  • 2 tablespoons sugar
  • 2 tablespoons water
  • Zest of 1 large lime or 2 small limes
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon half-and-half
  • 1.25 cups ice cubes

Instructions

  1. In a small saucepan over medium heat, simmer sugar and water until the sugar dissolves, stirring occasionally.
  2. Stir in the lime zest and remove from heat. Cover and let the mixture steep for 1 hour, then strain the syrup through a fine-mesh sieve, discarding the zest. (Extra lime simple syrup can be refrigerated for up to 1 week).
  3. Add 2 tablespoons of the simple syrup, lime juice, half-and-half, and ice to a blender.
  4. Blend until the ice is crushed, and the mixture has a slushy consistency.
  5. Pour into a glass and serve immediately.
