Ingredients

  • 2 oz. Sipsmith VJOP London Dry Gin or gin of choice
  • 1/2 oz. Edith Grey simple syrup (recipe below)
  • 3/4 oz. lemon juice
  • 1 lavender-infused egg white
  • Splash of Schramsberg Blanc de Blanc
  • Agave syrup
  • Edith Grey tea
  • 1 part Big Heart Tea Co. Edith Grey hot tea
  • 1 part white sugar
  • 1 egg
  • Dried lavender buds

Instructions

  1. Place a whole egg in its shell in a sealed container on a bed of lavender buds in the refrigerator for 2-3 days.
  2. Brew the Big Heart Tea Co. Edith Grey hot tea according to the package instructions, then combine with equal parts sugar while hot to create the Edith Grey simple syrup. Stir until clear and let it cool.
  3. Once the egg and syrup are ready, combine the gin, Edith Grey simple syrup, lemon juice, and lavender-infused egg white in a shaker.
  4. Dry shake the mixture, then add ice and continue shaking for at least 30 seconds.
  5. Strain the cocktail into a glass and top it with a splash of Schramsberg Blanc de Blanc.
  6. Garnish the glass with an agave syrup stripe and a touch of Edith Grey tea on the edge for a stunning presentation.
