Ingredients

  • 1/2 cup + 1 1/2 teaspoons vodka
  • 3/4 cup milk (2%)
  • 3 tablespoons cream (whole, heavy or whipping cream with at least 30% fat content)
  • Zest of 3 large lemons
  • 1/4 - 1/3 cup superfine sugar

Instructions

  1. Wash the lemons thoroughly and carefully remove the lemon peels, ensuring to leave as little white pith as possible.
  2. Place the vodka and lemon peels in a large jar and store in a dark closet for 10-15 days, swirling the liquid in the jar once or twice a day.
  3. Remove the lemon peels from the jar and return the liquid to the jar.
  4. In a medium saucepan, combine the lemon peels with the cream and milk, bringing the mixture to a boil, then remove from heat.
  5. Immediately strain the liquid through a sieve into a clean bowl, discarding the lemon peels. Add the sugar to the bowl and stir until it dissolves. Let the mixture cool completely, then add the vodka and mix well.
  6. Pour the Limoncello Cream into a clean bottle and refrigerate for 3-5 days before serving. Shake well before serving.
