Ingredients
- 1/2 cup + 1 1/2 teaspoons vodka
- 3/4 cup milk (2%)
- 3 tablespoons cream (whole, heavy or whipping cream with at least 30% fat content)
- Zest of 3 large lemons
- 1/4 - 1/3 cup superfine sugar
Instructions
- Wash the lemons thoroughly and carefully remove the lemon peels, ensuring to leave as little white pith as possible.
- Place the vodka and lemon peels in a large jar and store in a dark closet for 10-15 days, swirling the liquid in the jar once or twice a day.
- Remove the lemon peels from the jar and return the liquid to the jar.
- In a medium saucepan, combine the lemon peels with the cream and milk, bringing the mixture to a boil, then remove from heat.
- Immediately strain the liquid through a sieve into a clean bowl, discarding the lemon peels. Add the sugar to the bowl and stir until it dissolves. Let the mixture cool completely, then add the vodka and mix well.
- Pour the Limoncello Cream into a clean bottle and refrigerate for 3-5 days before serving. Shake well before serving.
