Ingredients

  • 1/4 cup sugar
  • 1/2 cup packed fresh cilantro leaves
  • 1/4 cup packed fresh Italian parsley leaves
  • 1 medium jalapeño, stemmed and seeded
  • 1/2 tsp. caraway seeds
  • 1/2 tsp. cumin seeds
  • 1/4 cup white rum
  • 2 large Tuscan black kale leaves, plus 1 small leaf for garnish
  • 2 tbsp fresh lime juice

Instructions

  1. In a small pot, combine the sugar and 2/3 cup of cold water. Bring to a boil over medium-high heat, stirring to dissolve the sugar. Once dissolved, remove from heat and allow the syrup to cool slightly.
  2. Transfer the syrup to a blender and add the cilantro, parsley, jalapeño, caraway, and cumin. Blend until completely smooth.
  3. Strain the mixture through a fine mesh strainer into a medium bowl, pressing on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids and refrigerate the syrup until ready to use.
  4. Rinse out the blender and set a fine mesh strainer over a medium jar. Blend the rum and 2 large kale leaves until smooth, then strain the liquid into the jar, pressing on the solids with the back of a spoon. Cover and refrigerate until ready to use.
  5. Fill a collins glass and a cocktail shaker with ice. In the shaker, combine 1/4 cup of the kale-infused rum, 2 tbsp lime juice, and 1 tbsp plus 1 1/2 tsp harissa syrup. Shake vigorously.
  6. Strain the cocktail into the glass and garnish with a small kale leaf. Serve immediately and repeat for additional servings.
