Lavender Spark Sour

Ingredients
- 1 cup plus 1 tsp. granulated sugar
- 2 1/2 tbsp. dried lavender
- Pinch of sea salt
- 1 1/2 oz. dry gin (preferably Portobello Road)
- 3/4 oz. fresh lemon juice
- 1/2 oz. green chartreuse
- 1/2 oz. lavender syrup
- 1 egg white
Instructions
- To make the lavender syrup, combine 1 cup of sugar, 1 1/2 tablespoons of lavender, and 1 cup of water in a small saucepan over medium-high heat. Cook until the sugar has dissolved.
- For the lavender dust, combine the remaining sugar, lavender, and a pinch of sea salt in a spice grinder. Grind until it reaches a smooth consistency.
- In a cocktail shaker, combine the gin, lemon juice, green chartreuse, lavender syrup, and egg white. Shake vigorously, then add ice and shake again.
- Strain the mixture into a coupe glass and garnish with a sprinkle of lavender dust.
