Ingredients

  • 4 tbsp butter
  • 1/2 cup heavy whipping cream
  • 1/2 cup Swerve brown sugar sweetener
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup Swerve confectioners sweetener
  • 2 tbsp sugar-free butterscotch sauce
  • 12 oz Diet Cream Soda
  • 2 tbsp butterscotch sauce
  • 3-4 tbsp butterscotch whipped cream

Instructions

  1. Chill the mug or glass in the freezer, and ensure the cream soda is cold or use ice.
  2. To make the butterscotch sauce, melt the butter in a small saucepan. Then add Swerve brown sugar, heavy cream, and salt. Whisk together, bring to a boil, and simmer until it thickens.
  3. For the whipped topping, combine heavy cream and Swerve confectioners in a mixing bowl. Whip until it thickens, then add 2 tablespoons of butterscotch sauce and continue to whip to combine.
  4. To make the butterbeer drink, add the cream soda to the mug along with 2 tablespoons of butterscotch sauce and mix well. Top with 3-4 tablespoons of the whipped topping and serve.
  5. For an alcoholic variation, add 1 shot of rum to the cream soda and butterscotch sauce before adding the topping.
