Ingredients

  • 1 medium raw mango
  • 1/4 cup sugar (adjust to taste)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cardamom
  • a pinch of saffron
  • a pinch of black salt or rock salt (optional)
  • mint sprig (optional)
  • 1 cup cold water
  • ice cubes

Instructions

  1. Wash and dry the raw mango, then peel and discard the skin.
  2. Place the peeled mango in a pot, add water, and bring to a boil. Simmer until the mango is soft, then allow it to cool.
  3. Once cooled, remove the pulp from the mango and discard the seeds.
  4. Place the pulp in a pot, add sugar, saffron, cardamom, and salt. Cook over low heat for 15 minutes, stirring occasionally.
  5. Remove the pot from the heat and blend the mixture until smooth.
  6. Allow the concentrate to cool and then transfer it to a glass jar. Refrigerate for up to a month.
  7. To serve, mix 3 to 4 tablespoons of concentrate with cold water and ice cubes. Add a pinch of rock salt, shake or blend well, and serve with a sprig of mint.
