Ingredients
- 1 medium raw mango
- 1/4 cup sugar (adjust to taste)
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground cardamom
- a pinch of saffron
- a pinch of black salt or rock salt (optional)
- mint sprig (optional)
- 1 cup cold water
- ice cubes
Instructions
- Wash and dry the raw mango, then peel and discard the skin.
- Place the peeled mango in a pot, add water, and bring to a boil. Simmer until the mango is soft, then allow it to cool.
- Once cooled, remove the pulp from the mango and discard the seeds.
- Place the pulp in a pot, add sugar, saffron, cardamom, and salt. Cook over low heat for 15 minutes, stirring occasionally.
- Remove the pot from the heat and blend the mixture until smooth.
- Allow the concentrate to cool and then transfer it to a glass jar. Refrigerate for up to a month.
- To serve, mix 3 to 4 tablespoons of concentrate with cold water and ice cubes. Add a pinch of rock salt, shake or blend well, and serve with a sprig of mint.
