Ingredients

  • 2 oz Irish whiskey
  • 1 tsp ground espresso
  • 2 tsp demerara sugar
  • 3 oz cold brew coffee
  • Whipped cream (for serving)

Instructions

  1. Combine the Irish whiskey and espresso in a small bowl and let it stand for 15 minutes.
  2. Strain the whiskey through a coffee filter into a cocktail shaker.
  3. In a separate bowl, stir the demerara sugar and 2 tsp hot water until the sugar is dissolved to make a syrup.
  4. Add the demerara syrup and cold brew coffee to the cocktail shaker, then fill it with ice.
  5. Shake the mixture until the outside of the shaker is frosty, about 30 seconds.
  6. Strain the cocktail into a Collins glass filled with ice and top it with whipped cream.
