Ingredients

  • 6 large egg yolks
  • 1/2 cup sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/2 vanilla bean, split lengthwise and seeds scraped out
  • 1 oz Baileys Irish Cream
  • 1 oz Irish whiskey
  • Dash of chocolate bitters
  • 2 oz Guinness stout

Instructions

  1. In a large bowl, whisk together the egg yolks and sugar until pale.
  2. In a small saucepan, bring the whole milk, heavy cream, and scraped vanilla bean and seeds to a simmer.
  3. Slowly pour the hot liquid into the egg mixture while whisking continuously.
  4. Strain the mixture through a fine-mesh sieve into a clean bowl, then set the bowl in a larger bowl of ice water to cool.
  5. Stir in the Baileys Irish Cream and Irish whiskey until fully incorporated, then chill in the refrigerator for at least 3 hours.
  6. Freeze the mixture in an ice cream maker according to the manufacturer's directions.
  7. To assemble the float, place a scoop of the homemade ice cream in a glass.
  8. Add a dash of chocolate bitters and top with 2 oz of Guinness stout.
