Ingredients
- 6 large egg yolks
- 1/2 cup sugar
- 1 cup whole milk
- 1 cup heavy cream
- 1/2 vanilla bean, split lengthwise and seeds scraped out
- 1 oz Baileys Irish Cream
- 1 oz Irish whiskey
- Dash of chocolate bitters
- 2 oz Guinness stout
Instructions
- In a large bowl, whisk together the egg yolks and sugar until pale.
- In a small saucepan, bring the whole milk, heavy cream, and scraped vanilla bean and seeds to a simmer.
- Slowly pour the hot liquid into the egg mixture while whisking continuously.
- Strain the mixture through a fine-mesh sieve into a clean bowl, then set the bowl in a larger bowl of ice water to cool.
- Stir in the Baileys Irish Cream and Irish whiskey until fully incorporated, then chill in the refrigerator for at least 3 hours.
- Freeze the mixture in an ice cream maker according to the manufacturer's directions.
- To assemble the float, place a scoop of the homemade ice cream in a glass.
- Add a dash of chocolate bitters and top with 2 oz of Guinness stout.
