Ingredients

  • 2 large, 1-inch thick slices of fresh pineapple, cores removed or 1.50 oz of pineapple juice from concentrate
  • 1.50 oz coconut cream (not cream of coconut)
  • 1 oz rum, preferably dark
  • 3 oz IPA, half a bottle
  • 4-5 ice cubes
  • 1 slice of fresh pineapple for garnish (optional)

Instructions

  1. Blend the pineapple slices and strain to obtain about 2 oz of pineapple juice (or use the 1.5 oz of concentrated pineapple juice).
  2. In a blender, combine the ice cubes, pineapple juice, coconut cream, and rum. Blend until smooth.
  3. Pour the Piña colada mixture into a glass and add the IPA.
  4. Stir gently to blend the IPA with the mixture, creating a beautiful IPA lace on top.
  5. Garnish with a slice of fresh pineapple, if desired, and enjoy!
