Ingredients
- 1 ripe peach, pitted and sliced
- 1 tablespoon sugar
- 1 teaspoon fresh lemon juice
- 6 oz Prosecco or Champagne
- 1 tablespoon elderflower liqueur, preferably St-Germain
Instructions
- In a blender, puree the ripe peach, sugar, and lemon juice until smooth.
- Strain the mixture through a fine sieve into a metal bowl.
- Freeze the mixture until firm, for at least 6 hours.
- Use a fork to scrape the frozen granita until it becomes fluffy.
- Fill a Champagne flute halfway with Prosecco, leaving some space.
- Add the elderflower liqueur to the glass.
- Top the drink with a spoonful of the frozen peach granita.
- Serve immediately and enjoy!
