Ingredients

  • 1 orange
  • 1 oz vodka
  • 2 oz unsweetened orange juice
  • 1 oz rhubarb
  • 1 tsp sugar
  • 3 oz dry sparkling wine
  • 1 oz club soda
  • Ice

Instructions

  1. Chop the rhubarb into crescents.
  2. Peel the orange, leaving on the white pith, and slice it into crescents.
  3. In a pot, combine the peel and pith of one orange, chopped rhubarb, orange juice, and sugar.
  4. Heat the mixture on the lowest stove setting until warm, then add the vodka and simmer for an additional 20 minutes, stirring occasionally.
  5. Remove the mixture from heat, strain, and refrigerate until chilled.
  6. Add ice to a glass, then pour in the sparkling wine, club soda, and 3 ounces of the orange rhubarb mix.
  7. Garnish with an orange wedge and serve.
