  • 1/8 tsp ground nutmeg
  • 1/8 tsp pure vanilla extract
  • 1 large egg yolk
  • 2 tbsp granulated sugar
  • 1/4 cup heavy cream
  • 1/4 cup bourbon or rum (optional)
  • Whipped cream, for serving

  1. In a small saucepan over low heat, combine milk, cinnamon, nutmeg, and vanilla. Slowly bring the mixture to a low boil.
  2. In a mixing bowl, whisk egg yolk with sugar until it turns pale in color.
  3. Slowly add the hot milk mixture to the egg yolk in batches, whisking until well combined.
  4. Return the mixture to the saucepan and cook over medium heat until slightly thick (the mixture should coat the back of a spoon) but does not boil.
  5. Remove from heat, stir in heavy cream, and, if using, bourbon.

  7. When ready to serve, garnish with whipped cream and a sprinkle of cinnamon.
