Ingredients

  • 2 large egg yolks
  • 2 tablespoons granulated sugar
  • 1/2 cup heavy cream
  • 1 cup milk
  • 1/4 teaspoon freshly grated nutmeg
  • Pinch of salt
  • 1/8 teaspoon vanilla extract
  • 1/16 teaspoon rum extract (optional)

Instructions

  1. In a medium bowl, whisk together the egg yolks and sugar until the mixture becomes light and creamy.
  2. In a saucepan, bring the cream, milk, nutmeg, and salt to a gentle simmer, stirring frequently.
  3. Gradually add about 1/2 cup of the hot milk to the egg mixture, whisking vigorously to prevent any egg from cooking. This process helps to temper the eggs and prevent them from curdling when cooked.
  4. Repeat the process of adding hot milk to the egg mixture until all of the hot milk has been incorporated and the mixture is well combined.
  5. Pour the tempered egg mixture back into the saucepan with the milk on the stove, whisking quickly, and cook the mixture, stirring constantly, until it reaches 160 degrees F on a thermometer.
  6. Remove from the heat and stir in the vanilla and rum extract, if using.
  7. Transfer the eggnog into a bowl, cover it with plastic wrap, and refrigerate until thoroughly chilled.
