Ingredients
- 2 fresh pasteurized eggs
- 3 tablespoons granulated sugar, divided
- 3/4 cup heavy cream
- 1/2 cup whole milk
- 2 tablespoons bourbon
- 2 tablespoons Frangelico hazelnut liqueur
- Freshly grated nutmeg for garnishing
Instructions
- Carefully separate the egg yolks and whites into separate bowls.
- Whisk the egg yolks with 1 1/2 tablespoons of sugar until pale.
- Warm the cream and milk in a saucepan over medium heat until steaming, then slowly whisk about half of the mixture into the egg yolks.
- Cook the combined mixture over medium heat, stirring frequently until it coats the back of a spoon or till the first bubble pops.
- Strain the mixture into a large bowl and let it cool completely, then slowly whisk in the bourbon and Frangelico. Refrigerate for about 1 hour until chilled.
- In another bowl, beat the egg whites with the remaining 1 1/2 tablespoons of sugar until soft peaks form.
- Gently fold the egg white mixture into the chilled egg yolk and bourbon mixture. Refrigerate until thoroughly chilled.
- Just before serving, stir the eggnog and sprinkle with freshly grated nutmeg. Optionally, use a kitchen blowtorch to brûlée the tops of the glasses before dusting with nutmeg.
