Ingredients

  • 2 fresh pasteurized eggs
  • 3 tablespoons granulated sugar, divided
  • 3/4 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons bourbon
  • 2 tablespoons Frangelico hazelnut liqueur
  • Freshly grated nutmeg for garnishing

Instructions

  1. Carefully separate the egg yolks and whites into separate bowls.
  2. Whisk the egg yolks with 1 1/2 tablespoons of sugar until pale.
  3. Warm the cream and milk in a saucepan over medium heat until steaming, then slowly whisk about half of the mixture into the egg yolks.
  4. Cook the combined mixture over medium heat, stirring frequently until it coats the back of a spoon or till the first bubble pops.
  5. Strain the mixture into a large bowl and let it cool completely, then slowly whisk in the bourbon and Frangelico. Refrigerate for about 1 hour until chilled.
  6. In another bowl, beat the egg whites with the remaining 1 1/2 tablespoons of sugar until soft peaks form.
  7. Gently fold the egg white mixture into the chilled egg yolk and bourbon mixture. Refrigerate until thoroughly chilled.
  8. Just before serving, stir the eggnog and sprinkle with freshly grated nutmeg. Optionally, use a kitchen blowtorch to brûlée the tops of the glasses before dusting with nutmeg.
