Ingredients

  • 1 large egg, separated
  • 0.10 cup dark rum
  • 0.10 cup bourbon or rye whiskey
  • 0.10 cup VS or VSOP cognac
  • 0.10 cup heavy cream
  • 1 tablespoon dark maple syrup
  • 1/4 whole nutmeg seed

Instructions

  1. Beat the egg white in a medium bowl until stiff peaks form and set aside.
  2. In a large bowl, whisk together the egg yolk, rum, whiskey, cognac, cream, and maple syrup until well combined.
  3. Grate all the nutmeg into the yolk mixture and mix well.
  4. Gently fold in the beaten egg whites in 3 batches, mixing well after each addition until fully incorporated.
  5. Transfer the mixture to a sealable container and refrigerate for at least 3 hours.
  6. Stir the chilled mixture thoroughly before serving, ladle into small cups, and garnish with additional grated nutmeg.
