Ingredients

  • Handful of mint leaves (about 2 ounces, plus more for garnish)
  • 2 tablespoons white granulated sugar
  • 2 tablespoons filtered water
  • 1 cup seedless watermelon cubes
  • Crushed ice
  • 1.50 fluid ounces bourbon

Instructions

  1. In a small saucepan, mix the mint, sugar, and water. Heat until it reaches a slight simmer, then let it steep for 1 hour.
  2. Grill the watermelon wedges for about 1 minute per side on a hot charcoal grill, until they have grill marks.
  3. Chop the grilled watermelon into cubes, discard the rind, and puree in a food processor or blender.
  4. Strain the watermelon puree to remove the pulp.
  5. Fill a cocktail glass with crushed ice.
  6. Pour the bourbon into the glass.
  7. Add a tablespoon or two of the mint simple syrup.
  8. Top with the watermelon puree.
  9. Garnish with mint leaves.
