Grilled Watermelon Smash
A refreshing and unique twist on the classic mint julep with grilled watermelon puree and mint simple syrup.
Ingredients
- Handful of mint leaves (about 2 ounces, plus more for garnish)
- 2 tablespoons white granulated sugar
- 2 tablespoons filtered water
- 1 cup seedless watermelon cubes
- Crushed ice
- 1.50 fluid ounces bourbon
Instructions
- In a small saucepan, mix the mint, sugar, and water. Heat until it reaches a slight simmer, then let it steep for 1 hour.
- Grill the watermelon wedges for about 1 minute per side on a hot charcoal grill, until they have grill marks.
- Chop the grilled watermelon into cubes, discard the rind, and puree in a food processor or blender.
- Strain the watermelon puree to remove the pulp.
- Fill a cocktail glass with crushed ice.
- Pour the bourbon into the glass.
- Add a tablespoon or two of the mint simple syrup.
- Top with the watermelon puree.
- Garnish with mint leaves.
