Grilled Watermelon Mint Smash
A refreshing and flavorful cocktail made with bourbon, grilled watermelon puree, and mint simple syrup, perfect for summer gatherings.
Ingredients
- 8-10 fresh mint leaves
- 2 tbsp white granulated sugar
- 2 tbsp filtered water
- 1 cup seedless watermelon (cut into cubes)
- Crushed ice
- 1.50 fl oz bourbon
Instructions
- In a small saucepan, combine the mint, sugar, and water. Heat over medium low heat until the mixture reaches a slight simmer. Turn off the heat and let the mixture steep for 1 hour. Strain, discarding the mint leaves, and transfer to a small bowl. Set aside.
- Over a hot charcoal grill or griddle, grill the watermelon cubes for about 1 minute per side until they develop a dark red color and grill marks. Transfer to a plate and let cool slightly. Once cooled, puree the watermelon in a food processor or blender for about 10 seconds. Strain the watermelon puree and discard the pulp.
- Pack a cocktail glass with crushed ice. Pour the bourbon into the glass. Add a tablespoon or two of the mint simple syrup and top with the watermelon puree. Garnish with fresh mint leaves.
