Golden Sage Sparkler
A refreshing summer cocktail with golden plum, sage, pisco, and sparkling wine.
Ingredients
- 1 1/2 oz pisco
- 1 oz dry sparkling wine
- 3/4 oz honey syrup (2 parts honey to 1 part water)
- 1/2 oz lemon juice
- Small pinch of salt
- 1 dash peach bitters (optional)
- 1/2 golden plum (Mirabelle plum)
- 5 sage leaves (2 for garnish)
Instructions
- Place three sage leaves in a shaker and add honey syrup. Gently muddle the sage to release its oil.
- Cut the golden plum into two quarters and add them to the shaker with the sage-honey syrup. Crush the fruit to extract the plum juice.
- Add pisco, lemon juice, a pinch of salt, and peach bitters to the shaker.
- Pour the dry sparkling wine into a glass.
- Fill the shaker with ice and shake for 10 seconds.
- Double strain the mixture into the prepared glass over the sparkling wine.
- Garnish with sage and enjoy!
