Ingredients

  • 1 1/2 oz pisco
  • 1 oz dry sparkling wine
  • 3/4 oz honey syrup (2 parts honey to 1 part water)
  • 1/2 oz lemon juice
  • Small pinch of salt
  • 1 dash peach bitters (optional)
  • 1/2 golden plum (Mirabelle plum)
  • 5 sage leaves (2 for garnish)

Instructions

  1. Place three sage leaves in the bottom of a shaker and add the honey syrup, lightly muddling the sage to release its oils.
  2. Cut the half plum into two quarters and add them to the shaker with sage-honey syrup.
  3. Crush the plum quarters to extract as much juice as possible, then add the remaining ingredients except for the sparkling wine.
  4. Pour the sparkling wine into the glass before shaking the cocktail to allow it to mix on its own when poured over the top.
  5. Fill the shaker with ice and shake for 10 seconds.
  6. Double strain the mixture into a coupe glass over the sparkling wine, and garnish with a few small sage leaves. Enjoy!
