Ingredients

  • 3 kumquats, sliced
  • 4-6 mint leaves
  • 3/4 oz lime juice
  • 2 oz Irish gin
  • 1 bottle ginger beer
  • 1 lime wheel, for garnish
  • 2 pieces candied ginger

Instructions

  1. In a Collins glass, muddle together 2 sliced kumquats and mint leaves.
  2. Add lime juice and muddle lightly.
  3. Fill the glass with cubed ice, pour in the gin, and top with ginger beer.
