Ingredients

  • 1/16 cup dried hibiscus petals
  • 3 tablespoons boiling water
  • 1/8 cup fresh lime juice
  • 1/8 cup ginger liqueur (such as Domaine de Canton)
  • 1/8 cup ginger beer
  • 1 sprig fresh mint for garnish
  • fresh ginger, peeled and thinly sliced

Instructions

  1. Steep hibiscus flowers in boiling water for 5 minutes, then strain into a heatproof bowl placed in a bowl of ice to cool.
  2. Once cooled, transfer the hibiscus infusion to a small pitcher and stir in the lime juice and ginger liqueur.
  3. Pour the mixture into an ice-filled Collins glass (about 5 oz.).
  4. Top with ginger beer (about 1 oz.).
  5. Garnish with a sprig of mint and thinly sliced ginger.
