Ingredients
- 1 cup tonic water
- 1 tsp agar agar flakes (or your choice of setting agent)
- 1.70 fl oz gin (Bombay Sapphire)
- 2 lime slices
- 3.40 fl oz heavy cream
- Zest of half a lemon
- 1 tsp confectioners' sugar
- 2 lemon slices
- A sprig of mint (for garnish)
Instructions
- In a small saucepan, pour the tonic water and sprinkle the agar flakes on top. Heat and allow to simmer, stirring occasionally, until the agar has dissolved.
- Allow the mixture to cool slightly, then stir in the gin.
- Pour the jelly mixture into martini glasses and add a slice of lime to each.
- Allow the jelly to set.
- In a separate bowl, whip the heavy cream with lemon zest and confectioners' sugar until it holds its shape but is still soft.
- Dollop the whipped cream on top of each jelly.
- Garnish with a slice of lemon and a sprig of mint.
- Enjoy immediately.
