Ingredients

  • 1 cup tonic water
  • 1 tsp agar agar flakes (or your choice of setting agent)
  • 1.70 fl oz gin (Bombay Sapphire)
  • 2 lime slices
  • 3.40 fl oz heavy cream
  • Zest of half a lemon
  • 1 tsp confectioners' sugar
  • 2 lemon slices
  • A sprig of mint (for garnish)

Instructions

  1. In a small saucepan, pour the tonic water and sprinkle the agar flakes on top. Heat and allow to simmer, stirring occasionally, until the agar has dissolved.
  2. Allow the mixture to cool slightly, then stir in the gin.
  3. Pour the jelly mixture into martini glasses and add a slice of lime to each.
  4. Allow the jelly to set.
  5. In a separate bowl, whip the heavy cream with lemon zest and confectioners' sugar until it holds its shape but is still soft.
  6. Dollop the whipped cream on top of each jelly.
  7. Garnish with a slice of lemon and a sprig of mint.
  8. Enjoy immediately.
