Ingredients

  • 1 cup tonic water
  • 1 tsp agar agar flakes
  • 1 1/2 oz gin (Bombay Sapphire)
  • 2 lime slices
  • 3 1/2 tbsp heavy cream
  • Zest of half a lemon
  • 1 tsp confectioners' sugar
  • 2 lemon slices

Instructions

  1. In a small pan, pour the tonic water and sprinkle agar agar flakes over it. Heat and simmer until the agar dissolves.
  2. Allow the mixture to cool slightly, then stir in the gin.
  3. Pour the mixture into a martini glass and add a slice of lime to each jelly. Let it set.
  4. In a separate bowl, whip the heavy cream, lemon zest, and confectioners' sugar until it holds its shape but remains soft.
  5. Dollop the whipped cream on top of each jelly and garnish with a slice of lemon and a sprig of mint.
  6. Enjoy immediately.
