Ingredients
- 1 cup tonic water
- 1 tsp agar agar flakes
- 1 1/2 oz gin (Bombay Sapphire)
- 2 lime slices
- 3 1/2 tbsp heavy cream
- Zest of half a lemon
- 1 tsp confectioners' sugar
- 2 lemon slices
Instructions
- In a small pan, pour the tonic water and sprinkle agar agar flakes over it. Heat and simmer until the agar dissolves.
- Allow the mixture to cool slightly, then stir in the gin.
- Pour the mixture into a martini glass and add a slice of lime to each jelly. Let it set.
- In a separate bowl, whip the heavy cream, lemon zest, and confectioners' sugar until it holds its shape but remains soft.
- Dollop the whipped cream on top of each jelly and garnish with a slice of lemon and a sprig of mint.
- Enjoy immediately.
