Ingredients

  • 2 scoops peppermint ice cream
  • 1 cup eggnog
  • 1 oz rum
  • 3 oz ginger ale
  • 1 small peppermint candy cane, for garnish

Instructions

  1. Line a small baking sheet with plastic wrap and place 2 scoops of peppermint ice cream on it. Freeze for later use as garnish.
  2. In a bowl, soften the remaining ice cream and gradually stir in the eggnog and rum.
  3. Transfer the ice cream mixture to a serving glass or bowl and gently stir in the ginger ale.
  4. Garnish with a candy cane and the reserved frozen ice cream scoops.
