Ingredients
- 2 cups cream
- 8 oz water
- 2/3 cup sugar
- 4 oz 55% chocolate
- 1 1/4 cups 72% chocolate
- 4 vanilla beans
- 3/4 tsp salt
- 2 oz whipping cream
- 1/2 oz simple syrup
- 1/2 oz Angostura
- 5 oz salted hot chocolate base
- 3/4 oz Fernet-Branca
- 1/2 oz green Chartreuse
- Angostura cream, for garnish
Instructions
- In a medium pot, combine the cream and water, and heat over low heat, stirring frequently.
- Pour the liquid over the remaining hot chocolate base ingredients, mix well, and chill thoroughly.
- In a medium bowl, whip together all the cream ingredients until a loose consistency is achieved.
- Heat the prepared hot chocolate base, mix in the Fernet-Branca and green Chartreuse.
- Top the cocktail with the whipped cream and serve.
