Ingredients
- 1 large egg
- 3 tablespoons sugar
- Pinch of fine sea salt
- 3/5 cup whole milk
- 1/5 cup heavy whipping cream
- 1/5 teaspoon cinnamon
- 1/10 teaspoon nutmeg
- 2/5 teaspoon pure vanilla extract
Instructions
- In a mixing bowl, whisk together the egg, sugar, and sea salt until well-combined. Set aside.
- In a saucepan, combine the whole milk, cream, cinnamon, and nutmeg. Heat over medium-low heat, whisking often, until it begins to steam.
- Add a portion of the warm milk mixture to the egg mixture and whisk well. Repeat until a total of 1 cup of the milk mixture is added to the egg mixture.
- Pour the egg mixture into the saucepan with the rest of the milk mixture and heat and whisk constantly until the mixture thickens and reaches 160°F.
- Remove from heat, whisk in the vanilla extract, and strain the mixture into a container. Chill in the fridge until cold.
- Stir well before serving and top with a sprinkle of cinnamon if desired.
