Ingredients

  • 1 large egg
  • 3 tablespoons sugar
  • Pinch of fine sea salt
  • 3/5 cup whole milk
  • 1/5 cup heavy whipping cream
  • 1/5 teaspoon cinnamon
  • 1/10 teaspoon nutmeg
  • 2/5 teaspoon pure vanilla extract

Instructions

  1. In a mixing bowl, whisk together the egg, sugar, and sea salt until well-combined. Set aside.
  2. In a saucepan, combine the whole milk, cream, cinnamon, and nutmeg. Heat over medium-low heat, whisking often, until it begins to steam.
  3. Add a portion of the warm milk mixture to the egg mixture and whisk well. Repeat until a total of 1 cup of the milk mixture is added to the egg mixture.
  4. Pour the egg mixture into the saucepan with the rest of the milk mixture and heat and whisk constantly until the mixture thickens and reaches 160°F.
  5. Remove from heat, whisk in the vanilla extract, and strain the mixture into a container. Chill in the fridge until cold.
  6. Stir well before serving and top with a sprinkle of cinnamon if desired.
