Ingredients

  • 1 large egg yolk
  • 2 tablespoons sugar
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/2 tablespoon vanilla extract
  • Seeds from 1/2 vanilla bean
  • Pinch of salt
  • 1/3 cup heavy cream
  • 1/2 cup milk
  • 1/3 cup whipping cream
  • 2 teaspoons cream cheese
  • 1 tablespoon powdered sugar

Instructions

  1. Allow the egg to sit at room temperature for 30 minutes.
  2. In a mixing bowl, whisk the egg yolk, sugar, cinnamon, nutmeg, and salt until well combined.
  3. In a heavy saucepan, heat the heavy cream, milk, vanilla extract, and vanilla bean seeds over medium to medium-high heat, stirring constantly until it comes to a soft boil.
  4. Reduce the heat to low and slowly ladle a portion of the milk mixture into the egg mixture, whisking thoroughly after each addition.
  5. Pour the egg mixture back into the saucepan with the milk mixture and cook, stirring constantly, for 4 minutes.
  6. Remove from heat and let the eggnog cool. For best results, refrigerate overnight.
  7. For the topping, blend the cream cheese and 2 tablespoons of heavy cream until smooth. Add the remaining heavy cream and powdered sugar, and whisk on low speed until well blended. Then, beat the whipping cream on high speed until stiff peaks form.
  8. Fill a glass 3/4 full with eggnog and top with whipped cream, then sprinkle cinnamon over the whipped cream using a stencil.
