Ingredients

  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 1/4 cup heavy whipping cream
  • 1/2 cup milk
  • 1/8 teaspoon ground nutmeg
  • pinch of ground cinnamon
  • pinch of salt
  • 1/4 teaspoon vanilla extract
  • Ground cinnamon, for topping
  • Alcohol (optional, see notes)

Instructions

  1. In a medium saucepan over medium-low heat, combine milk, heavy cream, nutmeg, and cinnamon. Whisk frequently until the mixture is almost boiling.
  2. In a large bowl, whisk together the egg yolk and sugar until smooth.
  3. Gradually add a couple of tablespoons of the hot cream mixture to the egg yolk mixture, whisking thoroughly after each addition.
  4. Continue adding the hot cream mixture to the egg yolk mixture, whisking thoroughly between each addition.
  5. Pour the combined mixture back into the saucepan and cook on medium heat, whisking constantly until it reaches 160 degrees F.
  6. Remove from the heat and whisk in the vanilla. The mixture will thicken as it cools.
  7. Pour into a glass and lightly dust the top with ground cinnamon.
