Ingredients
- 1 large egg yolk
- 2 tablespoons granulated sugar
- 1/4 cup heavy whipping cream
- 1/2 cup milk
- 1/8 teaspoon ground nutmeg
- pinch of ground cinnamon
- pinch of salt
- 1/4 teaspoon vanilla extract
- Ground cinnamon, for topping
- Alcohol (optional, see notes)
Instructions
- In a medium saucepan over medium-low heat, combine milk, heavy cream, nutmeg, and cinnamon. Whisk frequently until the mixture is almost boiling.
- In a large bowl, whisk together the egg yolk and sugar until smooth.
- Gradually add a couple of tablespoons of the hot cream mixture to the egg yolk mixture, whisking thoroughly after each addition.
- Continue adding the hot cream mixture to the egg yolk mixture, whisking thoroughly between each addition.
- Pour the combined mixture back into the saucepan and cook on medium heat, whisking constantly until it reaches 160 degrees F.
- Remove from the heat and whisk in the vanilla. The mixture will thicken as it cools.
- Pour into a glass and lightly dust the top with ground cinnamon.
