Ingredients

  • 1 cup whole milk
  • 1/2 cinnamon stick
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon pure vanilla extract
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 teaspoon ground cinnamon for topping (optional)

Instructions

  1. In a medium saucepan over low heat, combine the milk, nutmeg, and vanilla, and add the cinnamon stick.
  2. Heat the mixture until it reaches a low boil (3-4 minutes).
  3. In a separate bowl, whisk together the egg yolks and sugar until the mixture becomes pale in color.
  4. Slowly add a spoonful of the hot milk to the egg yolks and sugar, mixing well. Continue until about 1/4 cup of hot liquid has been whisked in.
  5. Gradually pour in the remaining hot liquid into the egg mixture, whisking constantly.
  6. Pour the mixture back into the saucepan and cook over medium heat until it thickens enough to coat the back of a spoon.
  7. Remove from heat and stir in the heavy cream. Chill until ready to serve.
  8. Serve with a sprinkle of ground cinnamon, a cinnamon stick, or whipped cream.
