Ingredients
- 1 cup whole milk
- 1/2 cinnamon stick
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon pure vanilla extract
- 3 large egg yolks
- 1/4 cup granulated sugar
- 1/2 cup heavy cream
- 1/4 teaspoon ground cinnamon for topping (optional)
Instructions
- In a medium saucepan over low heat, combine the milk, nutmeg, and vanilla, and add the cinnamon stick.
- Heat the mixture until it reaches a low boil (3-4 minutes).
- In a separate bowl, whisk together the egg yolks and sugar until the mixture becomes pale in color.
- Slowly add a spoonful of the hot milk to the egg yolks and sugar, mixing well. Continue until about 1/4 cup of hot liquid has been whisked in.
- Gradually pour in the remaining hot liquid into the egg mixture, whisking constantly.
- Pour the mixture back into the saucepan and cook over medium heat until it thickens enough to coat the back of a spoon.
- Remove from heat and stir in the heavy cream. Chill until ready to serve.
- Serve with a sprinkle of ground cinnamon, a cinnamon stick, or whipped cream.
