Ingredients
- 1 cup pomegranate juice
- small bunch rosemary
- 1 bay leaf
- 4 whole cloves
- 1 cinnamon stick
- 2 tablespoons soft light brown sugar
- 1 orange, zest pared
- ice cubes
- 1/2 cup non-alcoholic gin
- 2 teaspoons red wine vinegar
- 1/4 cup pomegranate seeds (or 2 tablespoons tub seeds)
- 1/2 - 1 cup soda water
Instructions
- In a saucepan, combine pomegranate juice, half of the rosemary, bay leaf, cloves, cinnamon, brown sugar, and orange zest.
- Gently simmer over low heat.
- Once steaming, remove from heat, cover, and let it infuse for at least 2 hours, or up to 24 hours if chilled.
- When ready to serve, strain the infused pomegranate juice into a punch bowl over ice cubes.
- Add non-alcoholic gin, red wine vinegar, pomegranate seeds, and remaining rosemary sprigs.
- Top up with soda water in the glasses just before serving.
