Ingredients

  • 1 cup pomegranate juice
  • small bunch rosemary
  • 1 bay leaf
  • 4 whole cloves
  • 1 cinnamon stick
  • 2 tablespoons soft light brown sugar
  • 1 orange, zest pared
  • ice cubes
  • 1/2 cup non-alcoholic gin
  • 2 teaspoons red wine vinegar
  • 1/4 cup pomegranate seeds (or 2 tablespoons tub seeds)
  • 1/2 - 1 cup soda water

Instructions

  1. In a saucepan, combine pomegranate juice, half of the rosemary, bay leaf, cloves, cinnamon, brown sugar, and orange zest.
  2. Gently simmer over low heat.
  3. Once steaming, remove from heat, cover, and let it infuse for at least 2 hours, or up to 24 hours if chilled.
  4. When ready to serve, strain the infused pomegranate juice into a punch bowl over ice cubes.
  5. Add non-alcoholic gin, red wine vinegar, pomegranate seeds, and remaining rosemary sprigs.
  6. Top up with soda water in the glasses just before serving.
