Ingredients

  • 1/3 cup good quality full-fat coconut milk, chilled
  • 2/3 cup good quality almond milk or other non-dairy milk of choice
  • 2 tablespoons raw cashews, soaked
  • 2-3 Medjool dates, pitted and roughly chopped
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon rum extract
  • Pinch of grated fresh nutmeg
  • Pinch of ground cinnamon
  • Pinch of kosher salt
  • 1-2 tablespoons brandy, rum, or bourbon (optional)

Instructions

  1. Open the chilled can of coconut milk and scoop the solid cream off the top into a blender.
  2. Add almond milk, soaked cashews, dates, vanilla, rum extract, nutmeg, cinnamon, and salt. Blend until smooth.
  3. Strain the eggnog through a fine-mesh sieve if desired.
  4. Serve immediately or add brandy, rum, or bourbon to taste.
  5. Refrigerate any leftovers in an airtight container for up to 1 week. Enjoy slightly warm.
