Ingredients
- 1/3 cup good quality full-fat coconut milk, chilled
- 2/3 cup good quality almond milk or other non-dairy milk of choice
- 2 tablespoons raw cashews, soaked
- 2-3 Medjool dates, pitted and roughly chopped
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon rum extract
- Pinch of grated fresh nutmeg
- Pinch of ground cinnamon
- Pinch of kosher salt
- 1-2 tablespoons brandy, rum, or bourbon (optional)
Instructions
- Open the chilled can of coconut milk and scoop the solid cream off the top into a blender.
- Add almond milk, soaked cashews, dates, vanilla, rum extract, nutmeg, cinnamon, and salt. Blend until smooth.
- Strain the eggnog through a fine-mesh sieve if desired.
- Serve immediately or add brandy, rum, or bourbon to taste.
- Refrigerate any leftovers in an airtight container for up to 1 week. Enjoy slightly warm.
