Ingredients

  • 1.50 egg yolks
  • 2 tbsp sugar
  • 1 cup whole milk
  • 3/4 cup heavy cream
  • 1/4 tsp fresh ground nutmeg (packed)
  • 1/8 tsp ground cinnamon
  • 1/2 tsp vanilla

Instructions

  1. Whisk the egg yolks in a large bowl until they are light in color.
  2. Add the sugar and continue whisking until the mixture becomes light, fluffy, and smooth.
  3. In a medium saucepan, combine the milk and cream, and heat on medium until it just begins to steam.
  4. Slowly whisk the hot milk into the egg yolks until frothy, then stir in the cinnamon and nutmeg.
  5. Return the mixture to the pot and heat on medium until simmering and thickened, ensuring it does not boil.
  6. Remove from the heat and stir in the vanilla.
  7. Place a strainer over a bowl and carefully pour the mixture through the strainer.
  8. Cover and refrigerate until chilled.
