Ingredients
- 1/4 cup heavy cream
- 1 large egg yolk
- 1 tablespoon sugar
- 1/2 cup whole milk
- Pinch of salt
- 1 tablespoon dark rum
- Pinch of ground nutmeg
Instructions
- In a medium bowl, whisk together 1/4 cup of heavy cream, egg yolk, and sugar until pale and well combined.
- In a saucepan, bring the whole milk and salt to a simmer over medium-high heat.
- Slowly pour the hot milk into the egg mixture, whisking constantly to temper the yolks.
- Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it reaches 160 degrees Fahrenheit.
- Pour the eggnog into a clean bowl, then stir in the rum and nutmeg.
- Place the bowl of eggnog in a larger bowl filled with ice to cool it down, then refrigerate for 1-2 hours, stirring occasionally.
- Just before serving, whip the remaining heavy cream until soft peaks form, then fold it into the chilled eggnog.
