Ingredients

  • 1/4 cup heavy cream
  • 1 large egg yolk
  • 1 tablespoon sugar
  • 1/2 cup whole milk
  • Pinch of salt
  • 1 tablespoon dark rum
  • Pinch of ground nutmeg

Instructions

  1. In a medium bowl, whisk together 1/4 cup of heavy cream, egg yolk, and sugar until pale and well combined.
  2. In a saucepan, bring the whole milk and salt to a simmer over medium-high heat.
  3. Slowly pour the hot milk into the egg mixture, whisking constantly to temper the yolks.
  4. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it reaches 160 degrees Fahrenheit.
  5. Pour the eggnog into a clean bowl, then stir in the rum and nutmeg.
  6. Place the bowl of eggnog in a larger bowl filled with ice to cool it down, then refrigerate for 1-2 hours, stirring occasionally.
  7. Just before serving, whip the remaining heavy cream until soft peaks form, then fold it into the chilled eggnog.
  8. Serve the eggnog garnished with a sprinkle of nutmeg.
