Ingredients

  • 1 egg
  • 1.75 oz caster sugar
  • 1 1/3 cup milk
  • 0.50 oz dark rum
  • 0.50 oz brandy
  • 1/2 cup thickened cream
  • Ground nutmeg, to serve

Instructions

  1. In a saucepan over medium-low heat, combine the egg, sugar, and milk, whisking to combine.
  2. Cook and stir constantly for 6 to 8 minutes until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and stir in the rum, brandy, and half of the cream.
  4. Using an electric mixer, beat the remaining cream in a bowl until soft peaks form.
  5. Pour the egg mixture into a heatproof glass.
  6. Top with the whipped cream and sprinkle with nutmeg.
  7. Serve and enjoy!
