Ingredients

  • 8 oz cream
  • 8 oz water
  • 2/3 cup sugar
  • 1 cup 55% chocolate
  • 1 1/4 cups 72% chocolate
  • 4 vanilla beans
  • 3/4 tsp salt
  • 2 oz whipping cream
  • 1/2 oz simple syrup
  • 1/2 oz Angostura bitters
  • 5 oz salted hot chocolate base
  • 3/4 oz Fernet-Branca
  • 1/2 oz green Chartreuse
  • Angostura cream, for garnish

Instructions

  1. In a medium pot, combine the cream and water over low heat, stirring frequently to prevent boiling or burning.
  2. Pour the liquid over the remaining base ingredients, mix well, and chill completely to make the salted hot chocolate base.
  3. In a medium bowl, whip the whipping cream, simple syrup, and Angostura bitters until a loose consistency is achieved to make the whipped cream.
  4. Heat the hot chocolate base, mix with the Fernet-Branca and green Chartreuse to make the cocktail.
