Ingredients
- 8 oz cream
- 8 oz water
- 2/3 cup sugar
- 1 cup 55% chocolate
- 1 1/4 cups 72% chocolate
- 4 vanilla beans
- 3/4 tsp salt
- 2 oz whipping cream
- 1/2 oz simple syrup
- 1/2 oz Angostura bitters
- 5 oz salted hot chocolate base
- 3/4 oz Fernet-Branca
- 1/2 oz green Chartreuse
- Angostura cream, for garnish
Instructions
- In a medium pot, combine the cream and water over low heat, stirring frequently to prevent boiling or burning.
- Pour the liquid over the remaining base ingredients, mix well, and chill completely to make the salted hot chocolate base.
- In a medium bowl, whip the whipping cream, simple syrup, and Angostura bitters until a loose consistency is achieved to make the whipped cream.
- Heat the hot chocolate base, mix with the Fernet-Branca and green Chartreuse to make the cocktail.
- Top the cocktail with whipped cream and serve, garnished with Angostura cream.
