Ingredients

  • 2 tbsp milk
  • 2 tbsp heavy cream
  • 3/4 tbsp sugar
  • 1/8 vanilla bean (split lengthwise)
  • 1 egg yolk
  • 1/2 tbsp vodka
  • 1/2 tbsp brandy

Instructions

  1. Heat the milk, cream, sugar, and vanilla bean until it reaches 160°F.
  2. Beat the egg yolk and slowly add a few spoonfuls of the hot milk mixture while stirring quickly.
  3. Pour the tempered egg yolk mixture into the milk, stirring constantly.
  4. Stir the mixture over low heat for 5 to 10 minutes, keeping the temperature at about 160°F.
  5. Remove from heat, cool slightly, and add the vodka and brandy. Mix well.
  6. Strain the mixture through a sieve into a container, discarding the vanilla bean and any solids.
  7. Refrigerate overnight and serve in small cups or egg cups.
