Ingredients
- 2 tbsp milk
- 2 tbsp heavy cream
- 3/4 tbsp sugar
- 1/8 vanilla bean (split lengthwise)
- 1 egg yolk
- 1/2 tbsp vodka
- 1/2 tbsp brandy
Instructions
- Heat the milk, cream, sugar, and vanilla bean until it reaches 160°F.
- Beat the egg yolk and slowly add a few spoonfuls of the hot milk mixture while stirring quickly.
- Pour the tempered egg yolk mixture into the milk, stirring constantly.
- Stir the mixture over low heat for 5 to 10 minutes, keeping the temperature at about 160°F.
- Remove from heat, cool slightly, and add the vodka and brandy. Mix well.
- Strain the mixture through a sieve into a container, discarding the vanilla bean and any solids.
- Refrigerate overnight and serve in small cups or egg cups.
