Ingredients
- 5 egg yolks
- 1 cup milk
- 1/4 cup heavy whipping cream
- 1/4 cup granulated sugar (or brown sugar)
- 1 small cinnamon stick
- 1/4 tsp. nutmeg
- 1 tsp. vanilla
Instructions
- In a small saucepan over medium heat, combine the milk, cinnamon stick, nutmeg, and sugar. Heat until the sugar has dissolved and the mixture is hot, but not boiling.
- In a large mixing bowl, whisk the egg yolks until they become pale and fluffy.
- Slowly pour the hot milk mixture into the egg yolks, stirring constantly to prevent curdling.
- Pour the mixture back into the pan and heat over medium-low, stirring occasionally, until hot but not boiling.
- Strain the mixture through a fine mesh and stir in the cream. (You can also add alcohol at this point if desired.)
- Cool the eggnog to room temperature, then cover and chill until cold.
