Ingredients

  • 5 egg yolks
  • 1 cup milk
  • 1/4 cup heavy whipping cream
  • 1/4 cup granulated sugar (or brown sugar)
  • 1 small cinnamon stick
  • 1/4 tsp. nutmeg
  • 1 tsp. vanilla

Instructions

  1. In a small saucepan over medium heat, combine the milk, cinnamon stick, nutmeg, and sugar. Heat until the sugar has dissolved and the mixture is hot, but not boiling.
  2. In a large mixing bowl, whisk the egg yolks until they become pale and fluffy.
  3. Slowly pour the hot milk mixture into the egg yolks, stirring constantly to prevent curdling.
  4. Pour the mixture back into the pan and heat over medium-low, stirring occasionally, until hot but not boiling.
  5. Strain the mixture through a fine mesh and stir in the cream. (You can also add alcohol at this point if desired.)
  6. Cool the eggnog to room temperature, then cover and chill until cold.
