Ingredients
- 2 oz. gin
- 1/2 oz. Edith Grey simple syrup
- 3/4 oz. lemon juice
- 1 lavender-infused egg white
- Sparkling wine
- Agave syrup
- Edith Grey tea
Instructions
- Place a whole egg in its shell on a bed of lavender buds in a sealed container, and refrigerate for two to three days.
- Brew Edith Grey tea according to the package instructions. Combine with an equal amount of sugar while hot, stir until clear, and let it cool to make the Edith Grey simple syrup.
- In a shaker, combine the gin, Edith Grey simple syrup, lemon juice, and lavender-infused egg white.
- Dry shake, then add ice and continue shaking for at least thirty seconds.
- Strain the mixture into a glass and top with sparkling wine.
- Garnish the glass with a stripe of agave syrup and Edith Grey tea.
